Chicken Mozzarella Pasta

Ingredients

2 tablespoons olive oil, divided
1 small onion, diced
1 garlic clove, minced
1/4 cup oil packed sun dried tomatoes, chopped
1 teaspoon kosher salt
1 pound chicken breast, cooked and shredded
1 16 ounce package pasta, cooked
2 tablespoons fresh basil leaves, chopped
1/2 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, grated

Instructions

Heat 1 tbsp of oil in a large sauté pan over medium heat and cook the onions for 4 minutes.
Add the garlic, sun dried tomatoes and salt and sauté for an additional minute.
Add the pasta, 1 tablespoon of olive oil and the remaining ingredients. Stir to combine until heated through and the cheese begins to melt.
Serve.
