How is your spring going so far? Iโ€™m loving getting to see all the spring produce popping up at the farmers market! Plus, Easter is Sunday so Iโ€™m including lots of fun Easter recipes. Woo! Here we go!

BREAKFAST:

Smoothies for the week areย Blueberry Chia Smoothie, Immune Boosting Very Berry Smoothie, Chocolate Peanut Butter Smoothieย and then weโ€™ll have these delicious Carrot Cake Pancakes for Easter Brunch.

SNACKS:

I try to keep snacks as healthy as possible while also being super yummy and filling so weโ€™re havingย Chocolate Chia Seed Pudding, Strawberry Muffins, and Chocolate Chip Granola Bars and Pasta Chips. Then on Easter weโ€™re making these adorable Egg and Bacon Bunnies and Naturally Dyed Easter Eggs!

LUNCH:ย 

Mixing up lunch from week to weekย to keep it interesting is super important so weโ€™re having Freezer Stash Breakfast Burritos (page 66 in Meal Prep Magic) that Iโ€™ll prep on Sunday, Caprese Wraps, Cauliflower Crusted Grilled Cheese, andย Mexican Muffins. Plus a frittata with leftover pasta from Sundayโ€™s dinner.

DINNER:

Sunday: Iโ€™m going to make this beautiful Salmon with Fennel, Citrus and Olives with Roasted Sweet Potatoes and Air Fried Cauliflower for Easter dinner. Check out these 28 Easy Easter Recipes for some more inspiration and let me know what you make!

Monday: Vegetarian Crunchwrap Supremeย (Kenyaโ€™s invention) with Pressure Cooker Black Beans and Grilled Corn and Red Pepper Saladย for #meatlessmonday. Does your family try to have a vegetarian meal every now and then?ย

Tuesday:ย Chicken Pesto Pasta truly could not be an easier dish to whip up. Iโ€™m making a little extra pasta to save and use for pasta chips and a frittata this week as well! Pairing this pasta with a Kale Avocado Salad on the side.

Wednesday:ย Greek Style Shrimp served with a nice crust bread! You could serve this over pasta too!
