Why I Love This Recipe

Dragon fruit, also known as pitaya, has a mild sweetness and a soft, smooth texture that makes it incredibly blendable and oh so loved in our house. Pair it with raspberries, which are loaded with fiber and antioxidants (and always stocked in my freezer), and the result is a smoothie that earns its keep nutritionally while tasting like something you’d order at a juice bar.

My kids have been hooked on dragon fruit since they were babies, and honestly, so have I. If you want to take your dragon fruit obsession further, my Dragon Fruit Smoothie Bowl is a great next step. The Ingredients

  • Frozen dragon fruit: Fresh or frozen both work great here. If you can find frozen pitaya smoothie packs at your local health food store, those are convenient and perfectly portioned at about 3.5 ounces (roughly 1/2 cup) each. Otherwise just use frozen or fresh dragon fruit cubes measured to about 1/2 cup.
  • Frozen raspberries: Adds brightness, tartness, and a serious boost of fiber and antioxidants. This is what helps make the color so stunning too.
  • Banana: Adds natural sweetness and creaminess. A frozen banana makes the smoothie even thicker!
  • Raw beet: A small amount of raw peeled beet deepens the color, adds a touch of natural sweetness, and gets in an extra serving of vegetables.
  • Cashews: Soak them for at least two hours before blending. It makes them easier to digest and gives the smoothie a rich, creamy texture without any dairy.
  • Hemp seeds: A great plant-based source of protein and healthy fats, completely undetectable once blended.
  • Bee pollen: Brings enzymes, antioxidants, and a subtle floral note. Use it when you have it, skip it when you don’t.
  • Date: Just one for another touch of natural sweetness.
  • Milk of choice: Any milk works here: dairy, almond, oat or anything else you love.
  • Kefir: Optional, but a splash adds a probiotic boost and subtle tang that pairs really well with the raspberries.

FAQs

Can I make this smoothie without a high powered blender?

A high powered blender like a Vitamix or Blendtec will give you the smoothest result, especially with the soaked cashews and frozen fruit. A regular blender can work if the cashews are well soaked, just blend a little longer and add liquid as needed to keep things moving.

Is this smoothie good for kids?

My kids have loved dragon fruit since they were babies and this smoothie has always been a hit with them. The color alone is enough to get them excited about it. The raw beet is completely undetectable, making it an easy way to get in an extra vegetable.

Notes

  • Soak cashews for at least 2 hours before blending. In a pinch, a 30 minute soak in hot water helps.
  • Not a fan of beets? Swap for frozen riced cauliflower or leave it out entirely. Just know the smoothie won’t be quite as vibrantly pink.
  • Add a scoop of protein powder for an extra boost. Vanilla works especially well.
  • If using fresh dragon fruit, add a handful of ice to get that thick, frosty texture.
