I consider myself pretty healthy, but my husband takes it to an even higher level. He’s more of a au natural guy where I’ve still got a healthy amount (pun intended) of “if it comes from a box or can it’s all right with me” in me. Yes, I’m all about making things homemade as often as possible, but with so much keeping me busy, it’s not always a realistic goal. For example, as much fun as it is to make homemade ice cream, more times than not I throw my arms up and grab the Stonyfield from the freezer for me and the kids.

I don’t know if there’s something in the water or if a witch cast a spell on him, but my hubby has been diving in the kitchen more and more lately, coming up with a list of recipes that are actually really yummy! He’s been making this version of homemade ice cream that tastes unbelievably delicious, even to someone like me who wants the real deal.

The kids certainly can’t tell the difference and hubby says if he didn’t know better, he wouldn’t be able to either — and this man knows his ice cream. But the best part is that instead of needing an ice cream maker or having to wait hours for the ice cream to freeze, his version is ready in less than a minute, is totally healthy and the kids love helping him make it!

Nice Cream is one of our favorite things to make in our house. When we’re craving something cold and creamy, especially when it gets warm outside, we switch off between this recipe and Rainbow Nice CreamGreen Nice Cream, and Coco-Blue Nice Cream! They’re all super easy to make and have ingredients that are actually good for you!

Instructions

  • Place all of the ingredients in a blender.
  • Puree on a medium setting for 15-20 seconds, using the tamper of your blender to push down or stopping to push down with a spatula. You can this to be a fast process so the ice cream doesn’t melt.
  • Scrape down the sides and puree again. Repeat the process until the mixture is smooth like frozen yogurt/ice cream.** Sprinkle with favorite toppings! ***
  • Serve.****
  • * Here’s a great way to freeze bananas! Place them in a Ziploc bag (make sure to lay the slices out flat in the bag when you freeze so they don’t stick together) and leave them in the freezer so you can always make this treat on a moment’s notice.
  • ** Use the lowest setting to puree to avoid the ice cream from getting too loose and so it has more of a true ice cream texture.
  • *** You can top with granola, hemp seeds, sprinkles, berries, chopped nuts, dye free chocolate candies and more.
  • **** To make nice cream even more firm, place in a pyrex or baking dish and freeze for up to 3 hours to resemble ice cream.

  1. Amanda, I use my Magic Bullet to make smoothies using all kinds of frozen fruit, including those yummy frozen bananas. Bananas are great with milk and then I add vanilla flavoring. Super thick and yummy. Best part is, my two teenage daughters make smoothies all the time with it, using juice, yogurt, whatever. One has recently discovered frozen watermelon with frozen strawberries – nothing else added, tastes like a watermelon Jolly Rancher. I like the idea of making the mixture thick enough to scoop. Mmmm, excuse me, I have to go freeze some bananas now.

  2. Yum! I just got into the banana ice cream and made some with just banana and peanut butter (yum) – its nice to see a new recipe ingredients.

  3. My blender bit the dust, but going to try this in the Magic Bullet and see if I can get it to come out. I LOVE chocolate and banana 🙂 The kids may enjoy it, too. 🙂

  4. After you freeze the leftovers they will be a rock unless you blend them again but still quick and easy!

  5. Hubby tried freezing his leftovers. He wound up with a rock. Now he sits in the kitchen with the blender container and eats until there’s none left!

  6. YUM! I use a food processor to do mine and I only use bananas, a bit of rice milk and cocoa powder (but sometimes I keep it simple with bananas and rice milk). That’s it! Less is best.

  7. Eden, We use our food processor all the time to make frozen banana/berry ice cream. Just frozen bananas and frozen berries and puree. It does take a couple of minutes to turn into ice cream, but, it does eventually. Good Luck!

  8. I think it would work in a mini food processor, but a big one would probably liquify it too much.

  9. Hi! This sounds SO insanely delicious, but I don’t have a blender! Is there any way that this could possibly be made using a food processor?

  10. What a great idea to thicken up a smoothie and turn it into ice cream! I am definately going to be playing around with this recipe idea! As always, tks for sharing!!!

  11. Easy, simple – can’t wait to try it out! Any idea of the release date for your cookbook yet???

  12. Hey, it’s a recipe that I look for. I love ice cream but I don’t have an ice cream maker. Hopefully your husband will find another no machine needed ice cream recipe
