Tired of serving a plain steamed green veggie every night, I decided to jazz up some broccoli with a bit of added color, texture and a sweet sauce. At first I wondered if the kids would just eat the edamame, almonds and cranberries and avoid the broccoli, but they ate every bite and ended up asking for seconds.

I usually have all of the ingredients to make this dish on hand as they’re some of my staples. If you don’t have them, they’re worth picking up for whenever you want to enjoy this easy, yet impressive combination. Since you get a protein, a vegetable and a fruit, it’s like a healthy trifecta!

Broccoli Salad

Total Time 5 minutes

Ingredients  

  • 1 tablespoon honey
  • 2 tablespoon mayonnaise (or vegan mayonnaise)
  • 1/2 Tsp kosher salt
  • 2 tablespoon apple cider vinegar
  • 4 Cups Broccoli Florets, steamed
  • 1/2 Cup dried cranberries
  • 1 Cup Frozen Edamame, defrosted
  • 1/4 Cup Toasted Almonds, sliced or slivered

Instructions 

  • Place the honey, mayonnaise, salt, and vinegar in a large bowl and whisk to combine.
  • Add the rest of the ingredients and toss to coat with dressing.
  • Serve.

    Nayonaisse for mayo. Almond slivers toasted in pan. Mini wine grapes. rice vinegar and extra honey and a touch of lemon juice.

  3. This sounded so good…until I saw the mayo. gross. I don’t eat mayo or mw or sourcream…what can I do to sub it

  4. Oh, my daughter would love this! She is really into robots right now. First day of school lunch will be rice balls. We use sushi rice mixed with shredded carrot and inside is cream cheese, avocado and cucumber. We use a mold to make them so they are in the shapes of a bear, a star and a heart. She loves them!

  5. I made this last night and it was a hit. I didn’t bother steaming the broccoli but I did cook the edamame beans in the microwave with a bit of water for 3 minutes. I tossed them in with the broccoli while they were still hot which just slightly softened the broccoli. The texture was perfect! I also used cashews instead of almonds just because I like them better : )

  6. So good! Surprisingly, I had all the ingredients too (yeah me!), so we’re eating this right now. My toddler is only eating the cranberries and edamame so far, but that’s okay 🙂

  8. For me personally, I like my fresh broccoli florets boiled for 2 and a half minutes…that leaves them blanched at the perfect crispness without the raw taste.

  9. So far 2yo will only eat broccoli swimming in cheese sauce. I bet the sweetness of this could win him over. Plus he loves cranberries! Will give it a try…
