  2. Dip and coat the banana slices: Take each banana slice and dip it into the pancake batter, ensuring that it’s coated all over. Let any excess batter drip off back into the bowl.
  3. Cook to golden perfection: Heat a griddle or skillet over medium heat and lightly butter it to prevent sticking. Carefully place the batter-coated banana slices onto the heated surface.   • Cut the bananas into 1/4 inch slices. I like to make slices on a diagonal bias so they’re a little bit longer than circles.
  • One at a time, dip the banana slices into the batter, coating all over, shaking off the excess batter into the bowl and place on a buttered griddle or skillet over medium heat.
  • Cook for 1-2 minutes on each side or until golden.
  • Serve with desired accompaniments such as maple syrup, honey*, powdered sugar, or fresh fruit.

  8. I have been making these for months now, ever since I found your site. I have 6 kids, 2 Great Danes and a husband at home who all love them. However, interestingly, my husband and teens like them better with barely ripe bananas (a still sweet but sort of fresher taste) while my younger ones like a sweeter very ripe banana. The variations on this are endless! You can use any kind of batter imaginable and add spices, different fruits, even grated chocolate for a dessert bite! My family favs are pumpkin spice batter or peanut butter pancake batter with the banana. Thank goodness for the options or I would be mighty sick of making these already since my family demands them weekly!
